This 30-Minute Creamy Tomato Gnocchi with Burrata is the ultimate weeknight meal, combining soft gnocchi with a rich tomato cream sauce and creamy burrata cheese. Ready in just half an hour, it’s the perfect balance of flavor and texture that’s guaranteed to impress. Quick, easy, and indulgent, this dish is sure to become a family favorite!

Ingredients

  • Olive oil
  • 8 cloves garlic, minced
  • 1 pint cherry tomatoes, halved
  • 1 package potato gnocchi (or gluten-free options like chickpea or cauliflower gnocchi)
  • 1 cup heavy cream
  • Burrata cheese
  • Fresh basil, chopped
  • Salt and pepper to taste
  • Optional: Crushed red pepper flakes for heat

Instructions

  • Prepare the Sauce: Heat olive oil in a large skillet over medium heat. Add garlic and sauté for about 3 minutes until fragrant. Add cherry tomatoes and cook until they burst, about 10 minutes. Stir in heavy cream, red pepper flakes (if using), salt, and pepper. Let it simmer for 2-3 minutes until the sauce thickens.
  • Cook the Gnocchi: Cook gnocchi in salted water according to the package directions until al dente. Reserve ½ cup of pasta water before draining the gnocchi.
  • Combine: Add the cooked gnocchi and reserved pasta water to the sauce. Toss everything together until the sauce becomes glossy and coats the gnocchi.
  • Garnish and Serve: Break the burrata into pieces and top the gnocchi with it. Garnish with fresh basil and serve hot.

Notes

  • Add Protein: For a protein boost, add chicken, shrimp, or meatballs to the dish.
  • Spicy Kick: Increase the heat by stirring in more crushed red pepper flakes.
  • Add Vegetables: Toss in spinach, mushrooms, or fennel to boost the nutrition of the dish.
  • Gluten-Free Version: Use chickpea or cauliflower gnocchi for a gluten-free option.
