Description

Baileys Cheesecake is a decadent, no-bake dessert that combines the creamy richness of cheesecake with the indulgent flavor of Baileys Irish Cream. With a buttery graham cracker crust and a smooth, Baileys-infused filling, this easy-to-make treat is perfect for special occasions or as a sweet indulgence after dinner.


Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup melted butter
  • 3 (8 oz) packages cream cheese, softened
  • 1/2 cup powdered sugar
  • 1/2 cup Baileys Irish Cream
  • 1 teaspoon vanilla extract
  • 2 cups heavy cream
  • 1/4 cup chocolate shavings or cocoa powder (for garnish)

Instructions

  • In a bowl, combine graham cracker crumbs, sugar, and melted butter. Press into the bottom of a springform pan to form the crust. Refrigerate for 10-15 minutes to set.
  • In a large bowl, beat softened cream cheese and powdered sugar until smooth and creamy.
  • Add Baileys Irish Cream and vanilla extract, and beat until fully incorporated.
  • In a separate bowl, whip heavy cream to stiff peaks. Gently fold whipped cream into the cream cheese mixture until smooth.
  • Pour filling into the prepared crust and smooth the top with a spatula.
  • Refrigerate for at least 4 hours or overnight until fully set.
  • Before serving, garnish with chocolate shavings or a dusting of cocoa powder.

Notes

  • To store: Keep the cheesecake in an airtight container in the fridge for up to 3-4 days.
  • Variations: Add a swirl of caramel or chocolate syrup, or use chocolate wafer crumbs for a different crust.
  • Non-alcoholic option: Replace Baileys with flavored coffee syrup or chocolate milk.
