Description

Slow Cooker Garlic Butter Beef Bites & Potatoes is a hearty and flavorful dish featuring tender beef chunks and baby potatoes in a rich, buttery garlic sauce. With minimal prep and a slow cooker doing all the work, this easy recipe is perfect for busy days. Enjoy a comforting, melt-in-your-mouth meal with deep, savory flavors.

Ingredients

For the Beef & Potatoes:

  • 2 lbs beef chuck or stew meat, cut into bite-sized pieces
  • 1.5 lbs baby potatoes, halved
  • 6 cloves garlic, minced
  • 1/2 cup unsalted butter, melted
  • Salt and freshly ground black pepper, to taste
  • Fresh herbs (such as parsley or thyme), chopped (optional, for garnish)

Instructions

  • Prepare the Beef: Season beef chunks with salt and pepper. For enhanced flavor, sear the beef in a hot skillet until browned on all sides (optional).
  • Assemble in Slow Cooker: Place baby potatoes at the bottom of the slow cooker. Layer the seasoned beef chunks on top.
  • Add Garlic Butter: Mix melted butter with minced garlic and pour evenly over the beef and potatoes.
  • Cook: Cover and cook on low heat for 6–8 hours or high heat for 3–4 hours, until the beef is fork-tender and potatoes are cooked through.
  • Serve: Stir gently, garnish with fresh herbs if desired, and serve warm.

Notes

  • Searing the beef adds extra flavor but is optional.
  • Potato Substitutes: Yukon Gold or sweet potatoes work well.
  • Enhancements: Add carrots, green beans, or mushrooms for extra nutrition.
  • Storage: Refrigerate for up to 4 days or freeze for up to 3 months.
