Description

Beef Lombardi Casserole is a comforting, cheesy, and hearty dish featuring layers of seasoned ground beef, creamy tomato sauce, tender pasta, and melty cheese. This easy-to-make casserole is perfect for busy weeknights, meal prep, or potlucks. A satisfying family favorite that’s freezer-friendly and absolutely delicious!

Ingredients

  • 1 lb ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes, drained
  • 1 can (8 oz) tomato sauce
  • 1 tsp Italian seasoning
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp red pepper flakes (optional, for spice)
  • 2 cups cooked egg noodles
  • 1 cup sour cream
  • 2 tbsp butter, melted
  • 1 cup shredded cheddar cheese
  • ½ cup shredded mozzarella cheese
  • ¼ cup green onions, sliced (for garnish)

Instructions

  • Preheat the Oven – Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  • Cook the Beef Mixture – In a large skillet over medium heat, cook the ground beef until browned. Add the diced onion and garlic, cooking for another 2-3 minutes until softened. Drain excess fat.
  • Make the Sauce – Stir in the diced tomatoes, tomato sauce, Italian seasoning, salt, pepper, and red pepper flakes. Simmer for 5 minutes.
  • Prepare the Pasta Mixture – In a bowl, combine the cooked egg noodles, sour cream, and melted butter. Mix until evenly coated.
  • Assemble the Casserole – Spread the pasta mixture evenly in the prepared baking dish. Layer the beef and tomato sauce mixture over the pasta. Sprinkle cheddar and mozzarella cheese on top.
  • Bake – Bake uncovered for 20-25 minutes, or until the cheese is melted and bubbly.
  • Garnish & Serve – Remove from the oven and let sit for 5 minutes before serving. Garnish with sliced green onions and enjoy!

Notes

  • Spicy Version: Add chopped jalapeños or extra red pepper flakes for heat.
  • Vegetarian Option: Swap the beef for sautéed mushrooms or lentils.
  • Low-Carb Version: Use zucchini noodles or cauliflower rice instead of pasta.
  • Different Cheese: Try Monterey Jack, Parmesan, or a Mexican cheese blend for a unique twist.
  • Protein Boost: Add cooked sausage or shredded chicken for extra heartiness.
