Ingredients

1 cup cottage cheese

1 ½ cups all-purpose flour

1 tsp baking powder

½ tsp baking soda

¼ tsp salt

2 large eggs

½ cup honey or maple syrup

1 tsp vanilla extract

1 cup fresh blueberries

¼ cup milk (dairy or plant-based)

Instructions

  • Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners or lightly grease it.

  • In a large bowl, mix the cottage cheese, eggs, honey (or maple syrup), and vanilla extract until smooth.

  • In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.

  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

  • Gently fold in the fresh blueberries, being careful not to crush them.

  • Spoon the batter into the muffin tin, filling each cup about ¾ full.

  • Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.

  • Allow the muffins to cool in the tin for 5 minutes before transferring to a wire rack to cool completely.

Notes

  • For extra crunch, try adding chopped nuts like walnuts or almonds.

  • Swap blueberries with raspberries or strawberries for a new twist.

  • To make it gluten-free, use almond flour or gluten-free all-purpose flour blend.

  • For lower sugar, replace honey or maple syrup with coconut sugar or stevia.
