Ingredients

  • 1 lb chicken breasts or thighs, cut into bite-sized pieces
  • 8 oz fresh mushrooms, sliced
  • 3 garlic cloves, minced
  • 1 tsp fresh ginger, minced
  • 3 tbsp soy sauce
  • 2 tsp cornstarch
  • 1 cup chicken broth
  • 2 tsp black pepper
  • 2 tbsp vegetable oil
  • 2 green onions, chopped (for garnish)

Instructions

  • Marinate the Chicken – In a bowl, combine chicken with 1 tbsp soy sauce and 1 tsp cornstarch. Mix well and let it marinate for 10 minutes.
  • Prepare the Sauce – In a separate bowl, mix the remaining soy sauce, chicken broth, 1 tsp cornstarch, and black pepper. Set aside.
  • Cook the Chicken – Heat vegetable oil in a large skillet or wok over medium-high heat. Add the marinated chicken and cook until browned and cooked through. Remove and set aside.
