Ingredients

  • 2 cups rolled oats (gluten-free, if needed)
  • 1/2 cup almond butter (or any nut/seed butter of your choice)
  • 2 large bananas, mashed
  • 1/2 cup blueberries (fresh or frozen)
  • Optional: honey or maple syrup for added sweetness

Instructions

  1. Preheat the oven to 350°F (180°C) and line an 8×8-inch pan with parchment paper.
  2. In a large mixing bowl, combine mashed bananas, rolled oats, almond butter, and optional honey or maple syrup. Mix until well combined.
  3. Fold in half of the blueberries, then pour the mixture into the prepared pan.
  4. Top with the remaining blueberries.
  5. Bake for 15 minutes, or until a toothpick inserted comes out clean.
  6. Let the baked oatmeal cool in the pan for a few minutes, then transfer to a wire rack to cool completely.
