Ingredients
- 2 cups rolled oats (gluten-free, if needed)
- 1/2 cup almond butter (or any nut/seed butter of your choice)
- 2 large bananas, mashed
- 1/2 cup blueberries (fresh or frozen)
- Optional: honey or maple syrup for added sweetness
Instructions
- Preheat the oven to 350°F (180°C) and line an 8×8-inch pan with parchment paper.
- In a large mixing bowl, combine mashed bananas, rolled oats, almond butter, and optional honey or maple syrup. Mix until well combined.
- Fold in half of the blueberries, then pour the mixture into the prepared pan.
- Top with the remaining blueberries.
- Bake for 15 minutes, or until a toothpick inserted comes out clean.
- Let the baked oatmeal cool in the pan for a few minutes, then transfer to a wire rack to cool completely.
