Ingredients
For the Salisbury Steaks:
- 1 lb ground beef (preferably 80/20)
- 1/4 cup breadcrumbs
- 1/4 cup milk
- 1/4 cup finely chopped onion
- 1 tablespoon Worcestershire sauce
- 1 teaspoon Dijon mustard
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon vegetable oil (for searing)
For the Mushroom Gravy:
- 2 tablespoons unsalted butter
- 1/2 cup finely chopped onion
- 2 cups sliced mushrooms (button or cremini)
- 2 tablespoons all-purpose flour
- 2 cups beef broth (low-sodium preferred)
- 1/4 cup heavy cream
- Salt and pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Prepare the Patties: In a large bowl, combine ground beef, breadcrumbs, milk, chopped onion, Worcestershire sauce, Dijon mustard, salt, and pepper. Mix gently until just combined (avoid overmixing). Shape into 4 equal patties about 1/2 inch thick.
- Sear the Patties: Heat vegetable oil in a large skillet over medium-high heat. Add patties to the skillet and cook for 4-5 minutes per side until golden brown and cooked through. Remove and set aside.
- Cook the Onions and Mushrooms: In the same skillet, melt butter over medium heat. Add chopped onion and sauté for 3-4 minutes until softened. Add sliced mushrooms and cook for 5-7 minutes, until browned.
- Make the Gravy: Sprinkle flour over onions and mushrooms, stirring to coat. Cook for 1-2 minutes to eliminate raw flour taste. Slowly add beef broth while stirring constantly. Bring to a simmer and cook for 5-7 minutes until gravy thickens slightly.
- Finish the Gravy: Stir in heavy cream, season with salt and pepper, and let simmer for another 2-3 minutes to thicken further.
- Assemble the Dish: Return the cooked Salisbury steaks to the skillet, spooning some gravy over each patty. Simmer for 2-3 minutes, allowing flavors to meld and steaks to warm through.
- Serve: Garnish with chopped parsley and serve immediately with mashed potatoes, rice, or your favorite vegetables.
Notes
- Add Garlic: For more depth of flavor, sauté garlic along with the onions.
- Use Ground Turkey or Chicken: Swap beef for ground turkey or chicken for a lighter option.
- Swap Mushrooms: Experiment with shiitake, portobello, or a mix of mushrooms for a richer flavor.
- Cheesy Version: Add shredded cheese on top of the Salisbury steaks before serving for a cheesy twist.
- Gluten-Free: Use gluten-free breadcrumbs and flour for a gluten-free version.
