Ingredients
For the Crust:
- 2 cups all-purpose flour
- 1 cup brown sugar
- 1 cup butter, melted
- ½ teaspoon salt
For the Filling:
- 3 eggs, at room temperature
- 1 ½ cups brown sugar
- 1 teaspoon vanilla extract
- 2 tablespoons all-purpose flour
- ½ teaspoon baking powder
- ¼ teaspoon salt
- 1 ½ cups shredded coconut
Instructions
1. Prepare the Crust
- Preheat oven to 350°F (175°C).
- Line a 9×13-inch baking pan with parchment paper for easy removal.
- In a mixing bowl, combine flour, brown sugar, melted butter, and salt until well mixed.
- Press the mixture evenly into the prepared pan.
- Bake for 12–15 minutes, or until lightly golden.
2. Make the Coconut Filling
- While the crust is baking, whisk together eggs, brown sugar, vanilla extract, flour, baking powder, and salt until smooth.
- Stir in shredded coconut, ensuring it is evenly distributed.
3. Bake the Bars
- Pour the filling over the warm crust and spread it evenly.
- Bake for 20–25 minutes, or until the top is set and lightly golden.
4. Cool & Serve
- Let the bars cool completely before slicing into squares.
- Enjoy as-is or with a dusting of powdered sugar for an extra touch!
