Description

Ingredients

For the Crust:

  • 2 cups all-purpose flour
  • 1 cup brown sugar
  • 1 cup butter, melted
  • ½ teaspoon salt

For the Filling:

  • 3 eggs, at room temperature
  • 1 ½ cups brown sugar
  • 1 teaspoon vanilla extract
  • 2 tablespoons all-purpose flour
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • 1 ½ cups shredded coconut

Instructions

1. Prepare the Crust

  • Preheat oven to 350°F (175°C).
  • Line a 9×13-inch baking pan with parchment paper for easy removal.
  • In a mixing bowl, combine flour, brown sugar, melted butter, and salt until well mixed.
  • Press the mixture evenly into the prepared pan.
  • Bake for 12–15 minutes, or until lightly golden.

2. Make the Coconut Filling

  • While the crust is baking, whisk together eggs, brown sugar, vanilla extract, flour, baking powder, and salt until smooth.
  • Stir in shredded coconut, ensuring it is evenly distributed.

3. Bake the Bars

  • Pour the filling over the warm crust and spread it evenly.
  • Bake for 20–25 minutes, or until the top is set and lightly golden.

4. Cool & Serve

  • Let the bars cool completely before slicing into squares.
