Ingredients

  • 2 large boneless, skinless chicken breasts, cut horizontally
  • 8 oz cream cheese, softened
  • 2 cups fresh spinach, rinsed
  • 2 tbsp olive oil, divided
  • 4 oz mozzarella cheese, shredded
  • 3 cloves garlic, minced
  • ½ tsp red pepper flakes (optional)
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp Italian seasoning (optional)

Instructions

  • Preheat Oven: Set oven to 400°F (200°C). Grease a 9×13-inch baking dish with 1 tbsp olive oil.
  • Prepare Chicken: Arrange chicken breasts in the dish. Season with salt, pepper, and Italian seasoning.
  • Sauté Spinach: In a skillet over medium heat, add 1 tbsp olive oil. Sauté garlic and red pepper flakes for 1 minute. Add spinach, cook until wilted, then remove from heat.
  • Assemble Casserole: Spread cream cheese evenly over the chicken. Top with sautéed spinach, then sprinkle mozzarella cheese over the top.
  • Bake: Bake for 20-30 minutes, or until the chicken is cooked through and the cheese is bubbly and golden.
