Description

This Chicken Gnocchi Soup is a rich, creamy, and comforting one-pot meal featuring tender chicken, pillowy gnocchi, and fresh vegetables in a flavorful broth. A homemade version of the restaurant favorite, this soup is perfect for cozy weeknights or special occasions.

Ingredients

For the Soup Base:

  • 1 lb boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 small onion, diced
  • 2 medium carrots, diced
  • 2 celery stalks, diced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • Salt and black pepper, to taste
  • 3 cups chicken broth

For the Creamy Broth:

  • 2 cups heavy cream
  • 2 cups whole milk

For the Finishing Touches:

  • 1 (16 oz) package potato gnocchi
  • 2 cups fresh spinach (or frozen, thawed, and drained)
  • ¼ cup grated Parmesan cheese (optional for garnish)

Instructions

1. Cook the Chicken

  • Heat olive oil in a large pot over medium heat.
  • Season chicken breasts with salt and pepper, then cook for 7-8 minutes per side, until browned and fully cooked.
  • Remove chicken from the pot and let cool slightly before shredding with two forks.

2. Sauté the Vegetables

  • In the same pot, add onion and garlic, sautéing for 2-3 minutes until softened.
  • Add carrots, celery, thyme, parsley, salt, and pepper. Cook for another 5 minutes, stirring occasionally.

3. Simmer the Broth

  • Pour in chicken broth, heavy cream, and whole milk.
  • Stir to combine and bring to a gentle simmer.

4. Cook the Gnocchi

  • Stir in the potato gnocchi.
  • Cook for 3-4 minutes, or until gnocchi floats to the top.

5. Finish the Soup

  • Return shredded chicken to the pot and stir in fresh spinach.
  • Let the soup cook for 2-3 minutes, until the spinach is wilted.

6. Serve & Garnish

  • Ladle the soup into bowls and garnish with grated Parmesan cheese, if desired.
  • Serve warm and enjoy!

Notes

  • For extra thickness, mix 1 tablespoon cornstarch with 1 tablespoon water and stir into the soup.
  • Dairy-Free Version: Use coconut milk or almond milk instead of heavy cream and whole milk.
  • Gluten-Free Option: Use gluten-free gnocchi.
  • Rotisserie Chicken Shortcut: Use pre-cooked rotisserie chicken to save time.
  • Add extra veggies like mushrooms, zucchini, or peas for extra nutrition.
