Ingredients
For the Soup Base:

Instructions
1. Cook the Chicken
- Heat olive oil in a large pot over medium heat.
- Season chicken breasts with salt and pepper, then cook for 7-8 minutes per side, until browned and fully cooked.
- Remove chicken from the pot and let cool slightly before shredding with two forks.
2. Sauté the Vegetables
- In the same pot, add onion and garlic, sautéing for 2-3 minutes until softened.
- Add carrots, celery, thyme, parsley, salt, and pepper. Cook for another 5 minutes, stirring occasionally.
3. Simmer the Broth
- Pour in chicken broth, heavy cream, and whole milk.
- Stir to combine and bring to a gentle simmer.
4. Cook the Gnocchi
- Stir in the potato gnocchi.
- Cook for 3-4 minutes, or until gnocchi floats to the top.
5. Finish the Soup
- Return shredded chicken to the pot and stir in fresh spinach.
- Let the soup cook for 2-3 minutes, until the spinach is wilted.
6. Serve & Garnish
