Description

These Chocolate Chip Cookie Dough Bars are a no-bake, indulgent treat that tastes just like classic cookie dough—without the raw egg! Made with buttery brown sugar dough, rich chocolate chips, and a smooth chocolate coating, these bars are perfect for parties, snacks, or whenever you crave a sweet dessert.

Ingredients

For the Cookie Dough:

  • 1 cup butter, softened
  • 1 cup brown sugar, packed
  • ½ cup granulated sugar
  • ¼ cup milk
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour (heat-treated, if preferred)
  • ½ teaspoon salt
  • 1 cup chocolate chips

For the Chocolate Coating:

  • 2 cups semi-sweet chocolate chips
  • 1 tablespoon coconut oil or butter

Instructions

  • Prepare the Dough: In a large bowl, beat butter, brown sugar, and granulated sugar until light and fluffy.
  • Add Wet Ingredients: Mix in milk and vanilla extract until well combined.
  • Incorporate Dry Ingredients: Stir in flour and salt until a smooth dough forms.
  • Fold in Chocolate Chips: Gently mix in chocolate chips until evenly distributed.
  • Shape the Bars: Line an 8×8-inch baking dish with parchment paper and press the dough evenly into the pan. Smooth the top.
  • Chill: Refrigerate for 1 hour, or until firm.
  • Prepare the Chocolate Coating: Melt chocolate chips and coconut oil (or butter) in a microwave-safe bowl in 30-second intervals, stirring in between until smooth.
  • Top with Chocolate: Pour melted chocolate over the chilled cookie dough and spread evenly. Sprinkle extra chocolate chips on top if desired.
  • Set the Bars: Return the dish to the refrigerator for another 30 minutes, or until the chocolate is set.
  • Slice and Serve: Once firm, remove from the dish, cut into bars, and enjoy!

Notes

  • Heat-Treat Flour: Bake flour at 350°F (175°C) for 5 minutes to ensure it’s safe to eat raw.
  • Nutty Addition: Stir in ½ cup chopped walnuts or pecans for extra crunch.
  • Gluten-Free Option: Use a 1:1 gluten-free flour blend instead of all-purpose flour.
  • Dairy-Free Version: Use vegan butter, dairy-free chocolate chips, and almond or oat milk.
  • Peanut Butter Swirl: Drizzle melted peanut butter over the chocolate before chilling.
