Description

These Christmas Gooey Butter Cookies are a festive, easy-to-make treat with a soft, gooey texture. Made with cream cheese, yellow cake mix, and holiday sprinkles, they’re perfect for cookie exchanges or adding holiday cheer to your dessert table!

Ingredients

  • 8 ounces full-fat cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 (15.25-ounce) box of yellow cake mix
  • 1/2 cup holiday sprinkles
  • 1/2 cup powdered sugar

Instructions

  • Preheat the Oven & Prepare Baking Sheets:
Preheat oven to 350°F (175°C). Line two baking sheets with parchment paper.
  • Mix Wet Ingredients:
In a large bowl, beat softened cream cheese and butter until smooth. Add egg and vanilla extract; mix until combined.
  • Incorporate Dry Ingredients:
Gradually stir in the yellow cake mix until a thick dough forms.
  • Add Sprinkles:
Gently fold in the holiday sprinkles to avoid bleeding colors.
  • Chill Dough:
Cover the dough with plastic wrap and refrigerate for at least 30 minutes.
  • Form & Coat Dough Balls:
Scoop 1 1/2-inch portions of dough, roll into balls, and coat in powdered sugar.
  • Bake:
Place dough balls on baking sheets, 2 inches apart. Bake for 10-12 minutes, until edges are set and centers remain soft.
  • Cool:
Let cookies cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

  • Use full-fat brick-style cream cheese for the best texture. Avoid spreadable cream cheese.
  • Chill the dough for easier handling and to prevent excessive spreading.
  • “Jimmies” sprinkles bleed less than other types.
