Description

This Cinnamon Roll Oatmeal Bake combines the comforting flavors of cinnamon rolls with the heartiness of oats, creating a warm, filling breakfast or brunch dish. Packed with oats and sweetened with maple syrup, it’s a healthier twist on the classic cinnamon roll. Easy to make ahead, customizable with your favorite add-ins, and perfect for meal prepping!

Ingredients

  • For the Oatmeal Bake:
    • 2 cups old-fashioned oats
    • 1 tsp cinnamon
    • 1/2 tsp baking powder
    • 1/4 tsp salt
    • 2 cups milk (dairy or non-dairy)
    • 2 large eggs
    • 1/4 cup maple syrup or honey
    • 1 tsp vanilla extract
    • 1/2 cup brown sugar, packed
    • 1/4 cup butter, melted
    • 1/2 cup chopped pecans or walnuts (optional)
  • For the Cinnamon Swirl:
    • 2 tbsp brown sugar
    • 1 tsp cinnamon
    • 1 tbsp butter, melted

Instructions

  • Preheat the Oven: Preheat your oven to 375°F (190°C) and lightly grease a 9×9-inch baking dish.
  • Prepare the Oatmeal Mixture: In a large mixing bowl, combine the oats, cinnamon, baking powder, salt, milk, eggs, maple syrup, vanilla, brown sugar, and melted butter. Stir until well combined.
  • Make the Cinnamon Swirl: In a small bowl, mix the brown sugar and cinnamon. Drizzle the melted butter over the top of the oatmeal mixture, then sprinkle with the cinnamon-sugar mixture. Use a knife to gently swirl it through the oatmeal mixture to create a marbled effect.
  • Bake: Pour the oatmeal mixture into the prepared baking dish and spread it out evenly. Bake for 30-35 minutes, or until the top is golden and a toothpick inserted comes out clean.
  • Cool and Serve: Let the oatmeal bake cool for a few minutes before slicing. Serve warm, topped with fresh fruit or a drizzle of icing, if desired.

Notes

  • Add-ins: You can include raisins, chopped apples, or chocolate chips for extra flavor and texture.
  • Vegan Option: Use flax eggs and a non-dairy milk alternative for a vegan version.
  • Icing: Drizzle with a simple powdered sugar glaze or cream cheese icing to mimic a traditional cinnamon roll.
  • Gluten-Free: Use certified gluten-free oats to make this recipe gluten-free.
