Description

Ingredients

3 pounds beef chuck, cut into cubes

1 onion, chopped

2 carrots, peeled and chopped

4 cloves garlic, minced

2 tablespoons tomato paste

1/4 cup flour

3 cups red wine (preferably Burgundy)

2 cups beef broth

1 tablespoon beef bouillon

2 sprigs thyme

2 bay leaves

1 cup pearl onions (fresh or frozen)

1/2 pound mushrooms, sliced

2 tablespoons butter

Salt and pepper to taste


Instructions

  • In a large Dutch oven, sear the beef cubes in batches until browned on all sides. Remove the beef and set aside.

  • In the same pot, sauté onions and carrots in butter for 2-3 minutes, then add garlic and cook for another minute.

  • Stir in the tomato paste and cook for 2-3 minutes. Sprinkle flour over the mixture and stir well.

  • Add the red wine, beef broth, and bouillon. Stir to combine and bring to a simmer. Add beef, thyme, and bay leaves.

  • Cover and braise in a 350°F oven for 2.5 hours.

  • Sauté mushrooms in butter until browned, then add pearl onions and cook for another 5 minutes.

  • Stir the mushrooms and onions into the stew and serve.

  • Gluten-Free Option: Use a gluten-free flour substitute for the stew.

  • Vegetarian Option: Omit the beef and use a mix of mushrooms and root vegetables like carrots and parsnips.
