Ingredients
- 1 cup cottage cheese (full-fat or low-fat)
- 2 large eggs
- 1½ cups almond flour
- 1 teaspoon baking powder
- ¼ teaspoon garlic powder
- ¼ teaspoon onion powder
- 1 tablespoon olive oil
- Salt and pepper to taste
- Fresh herbs (optional, for garnish)
Instructions
- Prepare the Mixture: In a large bowl, whisk cottage cheese and eggs until smooth. Add almond flour, baking powder, garlic powder, and onion powder. Stir until well combined into a thick batter. Season with salt and pepper.
- Heat the Pan: Preheat a non-stick skillet over medium heat and add a drizzle of olive oil.
- Cook the Flatbread: Pour about ¼ cup of batter into the pan, spreading it into a round shape. Cook for 3–4 minutes per side until golden brown and crispy.
- Repeat: Continue with the remaining batter, adding more oil if needed.
- Serve: Garnish with fresh herbs if desired. Enjoy warm.

- Storage: Store in an airtight container in the fridge for up to 3 days.
- Reheating: Warm in a skillet for 1–2 minutes per side or in the oven at 350°F (175°C) for about 5 minutes.
