Ingredients

  • 1 cup cottage cheese (any fat percentage)
  • ½ cup dark chocolate chips
  • 1 tbsp coconut oil

Instructions

  1. Melt the Chocolate:
    • Combine dark chocolate chips and coconut oil in a microwave-safe bowl. Microwave in 1-minute intervals, stirring each time, until fully melted and smooth.
  2. Blend the Cottage Cheese:
    • Add cottage cheese to a food processor and process until smooth. Scrape down the sides as needed for an even consistency.
  3. Combine Mixtures:
    • Pour the melted chocolate mixture into the food processor with the cottage cheese. Blend until fully combined, ensuring the mixture is smooth and uniform.
  4. Prepare the Pan:
    • Line a 9×5-inch loaf pan with parchment paper, leaving some overhang for easy removal.
  5. Freeze the Fudge:
    • Pour the fudge mixture into the prepared pan and smooth the top. Freeze for 4 hours or until firm.
  6. Cut and Serve:
    • Remove the fudge from the pan using the parchment paper. Cut into 8 squares. Let the fudge sit at room temperature for a few minutes before serving for the best texture and flavor.
