Instructions

  • Cook the Pasta: Cook the rigatoni according to the package instructions. Drain and set aside, reserving a bit of pasta water for later.
  • Cook the Chicken: While the pasta cooks, heat olive oil and 1 tablespoon butter in a large skillet over medium heat. Season the chicken breasts with salt, pepper, and Italian seasoning (if using). Sear the chicken for 6-7 minutes on each side, or until golden brown and cooked through (internal temperature should reach 165°F). Remove the chicken from the skillet and let it rest before slicing into thin strips.
  • Make the Garlic Butter Parmesan Sauce: In the same skillet, add 1 tablespoon butter and minced garlic. Cook for 1-2 minutes until the garlic is fragrant and golden. Add heavy cream and chicken broth, stirring to combine. Let it simmer for 2-3 minutes to thicken slightly.
