Creamy Garlic Mushroom & Spinach Chicken is a rich and comforting dish that combines juicy chicken breasts with a velvety garlic sauce, earthy mushrooms, and fresh spinach. Ingredients

For the Chicken:

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder

For the Sauce:

  • 1 tablespoon butter
  • 8 oz cremini or button mushrooms, sliced
  • 3 cloves garlic, minced
  • 1/2 cup dry white wine (or chicken broth)
  • 1 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 1 cup fresh spinach, chopped
  • 1 tablespoon fresh parsley, chopped (for garnish)

Instructions

  1. Season the chicken: Season both sides of the chicken breasts with salt, pepper, garlic powder, and onion powder.
  2. Cook the chicken: Heat olive oil in a large skillet over medium-high heat. Add the chicken breasts and cook for 6-7 minutes per side, or until golden brown and cooked through (internal temperature should reach 165°F/74°C). Remove the chicken from the skillet and set aside.
  3. Sauté the mushrooms: In the same skillet, melt the butter over medium heat. Add the sliced mushrooms and cook for 4-5 minutes, until softened and browned.
  4. Add garlic and wine: Add minced garlic and cook for 1 minute. Pour in white wine (or chicken broth) and scrape up any browned bits from the bottom of the pan. Let the wine cook for 2-3 minutes to reduce slightly.
  5. Make the creamy sauce: Reduce heat to low and stir in heavy cream and Parmesan cheese. Simmer for 3-4 minutes, or until the sauce thickens.
  6. Add spinach: Stir in chopped spinach and cook for 2-3 minutes until wilted.
  7. Combine chicken and sauce: Return the chicken breasts to the skillet and spoon some of the creamy mushroom-spinach sauce over the chicken. Simmer for another 2-3 minutes to heat the chicken through.
  8. Serve: Remove from heat and garnish with fresh parsley. Serve with rice, pasta, or mashed potatoes.

For extra flavor, you can add a splash of soy sauce or Dijon mustard to the sauce.
Use boneless, skinless chicken thighs for a juicier, more flavorful option.
