Ingredients
- 1 lb ground beef
- 1 medium onion, chopped
- 1 packet taco seasoning mix
- 1 can (15 oz) diced tomatoes
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 can (4 oz) diced green chilies
- 1 cup beef broth (or chicken broth)
- 1 cup heavy cream
- 1 cup shredded cheddar cheese
- Salt and pepper, to taste
- Optional toppings: sour cream, shredded cheese, tortilla chips, cilantro, avocado
Instructions
- Cook the beef: In a large pot, cook the ground beef over medium heat until browned, breaking it up into small pieces as it cooks. Drain any excess fat and add the chopped onion. Cook for another 2-3 minutes until the onion softens.
- Season the meat: Stir in the taco seasoning mix and cook for 1-2 minutes until fragrant.
- Add the other ingredients: Add the diced tomatoes, black beans, corn, green chilies, and beef broth. Stir to combine and bring the soup to a simmer.
- Creamy addition: Once the soup is simmering, reduce the heat to low and stir in the heavy cream and shredded cheddar cheese. Continue to stir until the cheese is fully melted and the soup is creamy.
- Simmer and adjust seasoning: Let the soup simmer for another 5-10 minutes, stirring occasionally. Taste and add salt and pepper as needed.
