Ingredients
- 2 lbs (900g) boneless, skinless chicken breasts
- 1/2 cup bourbon
- 1/4 cup honey
- 1/4 cup soy sauce
- 1/4 cup ketchup
- 1 tbsp Dijon mustard
- 2 cloves garlic, minced
- 1/2 tsp ground ginger
- 1/4 tsp red pepper flakes (optional for heat)
- 1 tbsp cornstarch (optional for thickening the sauce)
- Cooked rice or vegetables, for serving (optional)
Instructions
- Prepare the chicken: Place boneless, skinless chicken breasts in the bottom of your Crock Pot.
- Make the sauce: In a medium bowl, whisk together bourbon, honey, soy sauce, ketchup, Dijon mustard, garlic, ground ginger, and red pepper flakes (if using).
- Cook the chicken: Pour the sauce mixture over the chicken breasts in the Crock Pot, ensuring the chicken is well-coated.
- Slow cook: Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is fully cooked and tender.
- Thicken the sauce (optional): If you prefer a thicker sauce, mix 1 tablespoon cornstarch with 1 tablespoon of water to create a slurry. Add this mixture to the Crock Pot during the last 30 minutes of cooking, stirring to combine.
- Shred the chicken: Remove the chicken from the Crock Pot and shred it using two forks. Return the shredded chicken to the Crock Pot and stir to coat in the sauce.
- Serve: Serve the Honey Bourbon Chicken over cooked rice or with your favorite vegetables.
Notes
Add vegetables: Bell peppers, onions, carrots, or even potatoes can be added to the Crock Pot for extra flavor and nutrition.
Use chicken thighs: Boneless, skinless chicken thighs can be used for a juicier version of the dish.
Make it spicier: Add more red pepper flakes or a splash of hot sauce to the sauce for an extra kick.
Use a different sweetener: Swap honey with maple syrup or brown sugar for a different flavor.
