Description

Delicious Garlic Beef Pasta is a slow-cooked masterpiece featuring tender beef, savory garlic, and a rich, flavorful sauce. This easy-to-make recipe combines beef stew meat, tomatoes, garlic, and aromatic herbs to create a comforting meal perfect for busy days. With pasta absorbing all the delicious flavors, this dish is a must-try for anyone seeking an effortless yet satisfying dinner.

Ingredients

For the Beef:

  • 1 lb beef stew meat or chuck roast, cut into bite-sized cubes
  • 2 tbsp olive oil
  • 4 cloves garlic, minced
  • 1 onion, chopped
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (6 oz) tomato paste
  • 2 cups beef broth
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 1/2 tsp crushed red pepper flakes (optional for spice)
  • Salt and pepper, to taste

For the Pasta:

  • 12 oz pasta (penne, rigatoni, or your choice)
  • Fresh parsley or basil, chopped for garnish
  • Grated Parmesan cheese, for serving (optional)

Instructions

  1. Prepare the Beef: In a large skillet, heat olive oil over medium-high heat. Season the beef cubes with salt and pepper, then add them to the skillet. Brown the beef on all sides (about 4-5 minutes). This helps lock in the flavor, but the beef will cook further in the slow cooker.

  2. Slow Cook the Beef: Transfer the browned beef to the slow cooker. Add the minced garlic, chopped onion, diced tomatoes (with juice), tomato paste, beef broth, basil, oregano, and crushed red pepper flakes (if using). Stir to combine and season with additional salt and pepper to taste. Cover the slow cooker and cook on low for 6-7 hours or on high for 3-4 hours, until the beef is tender and the flavors meld together.

  3. Cook the Pasta: About 15 minutes before the beef is done, cook the pasta according to package instructions until al dente. Drain and set aside.

  4. Combine the Beef and Pasta: Once the beef is tender, stir in the cooked pasta to the slow cooker. Mix well, allowing the pasta to absorb the flavorful sauce. If the mixture is too thick, add a little more beef broth or water to reach your desired consistency.

  5. Serve: Garnish the pasta with chopped parsley or basil and top with grated Parmesan cheese, if desired. Serve hot and enjoy!

Notes

  • Storage/Reheating: Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. To reheat, warm in the microwave or stovetop. If the pasta absorbed too much sauce, add a little more beef broth or water when reheating.
  • Freezing: This recipe can be frozen for up to 3 months. Let it cool completely before storing in a freezer-safe container. Thaw overnight in the refrigerator and reheat as needed.
