Ingredients
1 lb beef sirloin or tenderloin, thinly sliced into strips
2 tbsp olive oil
1 medium onion, finely chopped
2 cloves garlic, minced
8 oz mushrooms, sliced
1 cup beef broth
1 cup sour cream
2 tbsp all-purpose flour
1 tbsp Dijon mustard
Salt and freshly ground black pepper, to taste
Fresh parsley, chopped (for garnish)
Egg noodles or rice, for serving
Instructions
- Sear the Beef: Heat olive oil in a skillet over medium-high heat. Add beef strips and cook until browned. Remove from skillet and set aside.
- Sauté Aromatics and Mushrooms: Add onion and garlic to the skillet. Cook until onion is translucent. Stir in mushrooms and cook until tender.
- Prepare the Sauce: Sprinkle flour over the mixture, stirring to combine. Gradually add beef broth, stirring to prevent lumps. Simmer until thickened.
- Combine Ingredients: Return beef to the skillet. Add sour cream and Dijon mustard, stirring well. Simmer until heated through.
- Season and Serve: Adjust seasoning with salt and pepper. Serve over egg noodles or rice, garnished with parsley.
