Ingredients
1 lb ground beef or stew meat
1 tbsp olive oil
1 onion, diced
2 cloves garlic, minced
2 carrots, sliced
2 potatoes, diced
1 cup green beans, chopped
1/2 cup peas
1/2 cup corn
1 (14.5 oz) can diced tomatoes
4 cups beef broth
2 cups water
1 tbsp Worcestershire sauce
1/2 tsp dried thyme
1/2 tsp dried oregano
Salt, to taste
Black pepper, to taste
1 bay leaf
Optional garnish: chopped fresh parsley

Brown the Beef: In a large pot, heat olive oil over medium heat. Add beef and cook until browned. Remove and set aside.

Sauté Aromatics: In the same pot, add onion and cook until soft. Add garlic and cook for 1 minute.

Combine Ingredients: Return beef to the pot. Add carrots, potatoes, green beans, peas, corn, diced tomatoes, beef broth, and water. Stir in Worcestershire sauce, thyme, oregano, salt, pepper, and bay leaf.
