Description

This Easy Vegetable Beef Soup recipe is a hearty, comforting dish made with tender beef, vibrant vegetables, and a flavorful broth. Perfect for chilly nights, this one-pot meal is packed with protein, fiber, and rich taste — an ideal choice for a nourishing weeknight dinner or cozy weekend meal.

Ingredients

1 lb ground beef or stew meat

1 tbsp olive oil

1 onion, diced

2 cloves garlic, minced

2 carrots, sliced

2 potatoes, diced

1 cup green beans, chopped

1/2 cup peas

1/2 cup corn

1 (14.5 oz) can diced tomatoes

4 cups beef broth

2 cups water

1 tbsp Worcestershire sauce

1/2 tsp dried thyme

1/2 tsp dried oregano

Salt, to taste

Black pepper, to taste

1 bay leaf

Optional garnish: chopped fresh parsley

Instructions

  • Brown the Beef: In a large pot, heat olive oil over medium heat. Add beef and cook until browned. Remove and set aside.

  • Sauté Aromatics: In the same pot, add onion and cook until soft. Add garlic and cook for 1 minute.

  • Combine Ingredients: Return beef to the pot. Add carrots, potatoes, green beans, peas, corn, diced tomatoes, beef broth, and water. Stir in Worcestershire sauce, thyme, oregano, salt, pepper, and bay leaf.

  • Simmer: Bring to a boil, then reduce heat. Cover and simmer for about 45 minutes to 1 hour, or until vegetables are tender.

  • Serve: Remove bay leaf. Ladle soup into bowls, garnish with parsley if desired, and serve hot.

Notes

  • Swap beef for ground turkey or chicken for a lighter version.

  • Use fresh or frozen vegetables based on availability.

  • Add cooked pasta, rice, or barley for extra heartiness.

  • To thicken the soup, mix 1 tbsp cornstarch with 2 tbsp water and stir in during the last 10 minutes.

  • Great for meal prep and freezer-friendly for up to 3 months.
