Description

Looking for a quick and satisfying meal? This Easy Weeknight Meatball Sub is perfect for busy evenings! Juicy meatballs, savory marinara sauce, and melted mozzarella all tucked inside a soft toasted sub roll. It’s a comforting yet simple meal ready in just 30 minutes, ideal for busy families.

Ingredients

  • 1 lb ground beef (or pork or turkey)
  • 1/4 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 1/2 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 1 cup marinara sauce
  • 4 sub rolls
  • 1 cup shredded mozzarella cheese
  • Olive oil for brushing

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, combine the ground meat, breadcrumbs, Parmesan, egg, garlic powder, oregano, basil, salt, and pepper. Mix until well combined.
  3. Roll the mixture into 16 small meatballs and place them on a baking sheet lined with parchment paper.
  4. Bake the meatballs for 15-20 minutes, or until cooked through.
  5. While the meatballs bake, heat marinara sauce in a saucepan over medium heat.
  6. Once the meatballs are cooked, transfer them to the marinara sauce and simmer for 5 minutes.
  7. Slice the sub rolls lengthwise but not all the way through, leaving a hinge. Brush the inside with olive oil and toast in the oven for 3-4 minutes.
  8. Place 4 meatballs in each roll, spoon marinara sauce over them, and top with mozzarella.
  9. Return the subs to the oven for 5 minutes or until the cheese melts.
  10. Serve immediately and enjoy!

Notes

  • Meatless Option: Use plant-based meatballs or vegetarian options like lentils or chickpeas.
  • Cheese Swap: Substitute mozzarella with provolone, cheddar, or Italian cheese blends.
  • Extra Veggies: Add sautéed onions, peppers, or spinach for extra flavor.
  • Spicy Kick: Add red pepper flakes or spicy sausage for some heat.
