  • 1 teaspoon honey or a pinch of sweetener (optional, for a hint of sweetness)

Instructions

1. Prepare the Ingredients:

  • Preheat your oven to 300°F (150°C).
  • Line a baking sheet with parchment paper.
  • Separate the egg whites and yolks into two bowls.

2. Whip the Egg Whites:

  • Add cream of tartar to the egg whites.
  • Use a hand or stand mixer to beat the egg whites on high speed until stiff peaks form.

3. Mix the Yolks and Cottage Cheese:

  • In the bowl with egg yolks, add blended cottage cheese, salt, cornstarch (if using), and honey or sweetener (if using).
  • Mix until smooth.

4. Combine the Mixtures:

  • Gently fold the whipped egg whites into the yolk and cottage cheese mixture in three additions, using a spatula.

5. Shape the Cloud Bread:

  • Scoop the mixture onto the prepared baking sheet, forming 6-8 small rounds or larger pieces based on preference.

6. Bake:
