Description

Ingredients

  • 4 boneless, skinless chicken breasts (or thighs)
  • 1.5 lbs baby Yukon Gold or red potatoes, halved
  • 4 cloves garlic, minced
  • 1 tsp Italian seasoning
  • ½ tsp smoked paprika
  • Salt & freshly ground black pepper, to taste
  • ⅓ cup grated Parmesan cheese
  • 3 tbsp olive oil
  • 1 tbsp fresh parsley, chopped (optional)

Instructions

  • Preheat Oven: Set to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.
  • Season Chicken: Mix 1 tbsp olive oil, half the minced garlic, Italian seasoning, smoked paprika, salt, and pepper. Coat the chicken evenly.
  • Prepare Potatoes: Toss potatoes with remaining olive oil, garlic, Parmesan cheese, salt, and pepper.
  • Arrange on Baking Sheet: Place chicken on one side and potatoes on the other in a single layer.
  • Bake: Roast for 25-30 minutes, flipping potatoes halfway through. Chicken is done when it reaches 165°F (74°C), and potatoes are golden brown.
  • Optional Garnish: Sprinkle extra Parmesan in the last 5 minutes. Garnish with fresh parsley before serving.
