Ingredients
- 4 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 teaspoon dried oregano
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon ground cumin
- Juice of 1 lemon
- Salt and pepper, to taste
- 2 cups cooked rice (or quinoa, couscous, or salad greens)
- 1 cucumber, sliced
- 1 cup cherry tomatoes, halved
- 1/2 red onion, thinly sliced
- 1/4 cup Kalamata olives, pitted and sliced (optional)
- Fresh parsley, chopped (optional, for garnish)
For the tzatziki sauce:
- 1 cup Greek yogurt
- 1/2 cucumber, grated and excess moisture squeezed out
- 2 cloves garlic, minced
- 1 tablespoon lemon juice
- 1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)
- Salt and pepper, to taste
Instructions
- Marinate the Chicken: In a small bowl, combine olive oil, oregano, garlic powder, onion powder, cumin, lemon juice, salt, and pepper. Rub the mixture over the chicken breasts, ensuring they are evenly coated. Cover and refrigerate for at least 30 minutes, preferably 1-2 hours.
- Make the Tzatziki Sauce: In a bowl, combine Greek yogurt, grated cucumber (with excess moisture squeezed out), garlic, lemon juice, dill, salt, and pepper. Stir well and refrigerate until ready to serve.
- Cook the Chicken: Preheat a grill or grill pan over medium-high heat. Cook the chicken for 6-7 minutes per side, or until the internal temperature reaches 165°F (74°C) and the chicken is golden brown. Let rest for a few minutes, then slice into strips.
- Assemble the Bowls: Divide the cooked rice (or your choice of grains or greens) into four bowls. Top with sliced chicken, cucumber, cherry tomatoes, red onion, and olives (if using).
- Serve: Drizzle the tzatziki sauce over the chicken and vegetables. Garnish with fresh parsley and serve immediately.
Notes
- Vegetarian Option: Swap the chicken for grilled vegetables like zucchini, eggplant, or bell peppers.
- Grain-Free: Serve over salad greens for a lighter, grain-free option.
- Add Feta: Crumbled feta cheese adds a classic Greek flavor to the bowl.
- Dairy-Free Option: Use a cashew-based tzatziki or lemon tahini dressing for a dairy-free alternative
