Ingredients

For the Chicken Meatballs:

  • 1 lb ground chicken (or ground turkey)
  • ¼ cup almond flour (or breadcrumbs)
  • ¼ cup fresh parsley, chopped
  • 1 tablespoon fresh dill, chopped (or 1 teaspoon dried)
  • 3 cloves garlic, minced
  • ¼ cup crumbled feta cheese
  • 2 scallions, finely chopped (or ¼ cup finely chopped red onion)
  • 1 teaspoon dried oregano
  • ½ teaspoon ground cumin
  • ½ teaspoon salt
  • 1 teaspoon lemon zest
  • 1 tablespoon olive oil (for cooking)

For the Lemon Orzo:

  • 1 cup orzo pasta (or couscous)
  • 2 cups chicken broth (or vegetable broth)
  • 2 tablespoons fresh lemon juice
  • ¼ cup crumbled feta cheese
  • 1 tablespoon olive oil

Instructions

1️⃣ Prepare the Meatball Mixture:

  • In a bowl, combine ground chicken, almond flour, parsley, dill, garlic, feta, scallions, oregano, cumin, salt, and lemon zest.
  • Mix gently until all ingredients are well incorporated.

2️⃣ Form the Meatballs:

  • Shape the mixture into 1½ to 2-inch meatballs using your hands or a scoop.

3️⃣ Cook the Meatballs:

  • Heat olive oil in a large skillet over medium heat.
  • Add meatballs in a single layer and cook for 10-12 minutes, turning occasionally, until browned and cooked through.
  • Remove and set aside.

4️⃣ Prepare the Lemon Orzo:

  • In the same skillet, add more olive oil if needed.
  • Sauté the orzo for 1 minute until lightly toasted.
  • Pour in chicken broth and bring to a boil.
  • Reduce heat and simmer for 8-10 minutes until orzo is tender and most of the liquid is absorbed.
  • Stir in fresh lemon juice and crumbled feta.
