Ingredients

2 lbs boneless, skinless chicken breasts or thighs

1 tablespoon olive oil

1 teaspoon paprika

1/2 teaspoon garlic powder

1/4 teaspoon salt

1/4 teaspoon black pepper

1/4 teaspoon cayenne pepper (optional)

1 lime, juiced

1/2 cup mayonnaise

1/4 cup sour cream

2 cloves garlic, minced

1 tablespoon lemon juice

1 teaspoon Dijon mustard

1/4 teaspoon salt

1/4 teaspoon black pepper

1 pound broccoli florets, steamed or roasted

2 cups cooked rice or quinoa

Lime wedges, for serving


Instructions

  • Prepare the Chicken: In a large bowl, toss chicken with olive oil, paprika, garlic powder, salt, pepper, cayenne, and lime juice. Grill over medium-high heat for 6-7 minutes per side or until fully cooked.

  • Roast the Broccoli: Toss broccoli with olive oil, salt, and a squeeze of lemon juice. Roast at 400°F for 15-20 minutes until tender and slightly crispy.

  • Make the Creamy Garlic Sauce: In a saucepan, combine garlic, butter, cream, salt, and pepper. Cook over medium heat, whisking until smooth and thickened.

  • Assemble the Bowls: Layer rice or quinoa at the base. Add grilled chicken slices, roasted broccoli, and drizzle with creamy garlic sauce. Garnish with fresh herbs and lime wedges.
