Ingredients
- 1 tablespoon olive oil
- 1 pound ground turkey
- 2 medium sweet potatoes, peeled and diced
- 1 small onion, chopped
- 2 garlic cloves, minced
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- ½ teaspoon chili powder (optional)
- Salt and pepper, to taste
- ½ cup low-sodium chicken broth or water
- Fresh cilantro, chopped (optional, for garnish)
- 1 tablespoon lime juice (optional)
Instructions
- Heat olive oil in a large skillet over medium heat. Add the ground turkey, breaking it apart with a spoon. Cook until browned, about 5-7 minutes. Remove turkey from the skillet and set aside.
- In the same skillet, add the diced sweet potatoes and chopped onion. Cook for about 5 minutes, stirring occasionally, until the sweet potatoes start to soften.
- Add garlic, cumin, paprika, chili powder, salt, and pepper. Stir to combine, cooking for an additional 2 minutes.
- Pour in chicken broth or water, cover, and cook for 10 minutes or until sweet potatoes are tender.
- Return the cooked turkey to the skillet. Stir everything together and cook for another 3-5 minutes until heated through and the flavors meld.
