Description

Ingredients

  • 2 tbsp olive oil
  • 1 onion, chopped
  • 2 leeks, chopped
  • 2 stalks celery, chopped
  • 1 carrot, diced
  • 1 red bell pepper, diced
  • 1 zucchini, diced
  • 2 potatoes, diced (or cauliflower for low-carb)
  • 2 garlic cloves, minced
  • 1 chili pepper, minced (optional)
  • 6 cups vegetable broth or water
  • 1 tsp turmeric (optional)
  • Salt & pepper, to taste
  • Fresh parsley, chopped, for garnish

Instructions

1️⃣ Sauté Aromatics – Heat olive oil in a large pot over medium heat. Add onion, leeks, and celery, and cook for 5 minutes until softened.
2️⃣ Add Garlic – Stir in garlic and cook for 1-2 minutes until fragrant.
3️⃣ Incorporate Vegetables – Add carrot, bell pepper, zucchini, and potatoes. Stir well.
4️⃣ Simmer – Pour in vegetable broth and bring to a boil. Reduce heat and simmer for 20-25 minutes until veggies are tender.
5️⃣ Season & Serve – Stir in turmeric, salt, and pepper. Adjust seasoning and garnish with fresh parsley before serving.


Notes

Add Protein – Stir in chickpeas, lentils, or shredded chicken.
Make It Spicy – Add extra chili pepper or red pepper flakes.
