Ingredients
- 2 cups quick oats
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1/2 cup creamy peanut butter (or almond butter, or sunflower seed butter)
- 1 teaspoon vanilla extract
- 2 ripe bananas, mashed
- 1/4 cup chocolate chips (optional, or substitute with chopped nuts)
Instructions
- Preheat the oven to 350°F (177°C).
- In a large bowl, combine all ingredients and mix until everything is well incorporated.
- Using a 2-tablespoon scoop, drop cookie dough onto a parchment-lined baking sheet. For larger cookies, use ¼ cup scoops.
- Flatten each scoop into a cookie shape, as they will not spread during baking.
- Bake for 14-17 minutes, or until the edges begin to brown.
- Allow cookies to cool before serving. Enjoy!
