Description

Ingredients

  • 1 cup (225 grams) cottage cheese (full-fat or reduced-fat)
  • 2 medium eggs (room temperature)
  • 1 cup (90100 grams) oat flour or whole wheat flour
  • 1 tsp baking powder
  • ΒΌ tsp baking soda
  • 2 tbsp raw unsweetened honey (or pure maple syrup)
  • 1 tsp pure vanilla extract (optional)
  • 2 tbsp dairy or plant-based milk (optional, as needed)
  • Olive oil, butter, or lard (for cooking)

Instructions

  1. Prepare the Batter:
    • In a large bowl, combine cottage cheese, eggs, honey, baking powder, baking soda, vanilla extract, and a pinch of salt. Mix until smooth.
    • Add flour and mix well. Gradually add milk if the batter is too thick.
  2. Cook the Pancakes:
