Description

Ingredients

  • 1 lb ground beef

  • 1 medium onion, diced

  • 2 cloves garlic, minced

  • 2 carrots, chopped

  • 2 celery stalks, chopped

  • 2 medium potatoes, diced

  • 1 can (14.5 oz) diced tomatoes (with juice)

  • 2 tbsp tomato paste

  • 4 cups beef broth

  • 1 tbsp Worcestershire sauce

  • 1 tsp Italian seasoning

  • 1 bay leaf

  • 1½ cups frozen mixed vegetables (peas, corn, green beans)

  • Salt and black pepper, to taste

  • 1 tbsp olive oil


Instructions

  1. In a large pot, heat olive oil over medium heat. Sauté onion and garlic until the onion is translucent.

  2. Add ground beef and cook until browned. Drain excess fat.

  3. Stir in carrots, celery, and potatoes. Cook for 3–5 minutes until slightly softened.

  4. Add diced tomatoes, tomato paste, Worcestershire sauce, Italian seasoning, and bay leaf. Stir to combine.

  5. Pour in beef broth and bring to a boil.

  6. Reduce heat to low, cover, and simmer for 20 minutes, or until vegetables are tender.

  7. Add frozen mixed vegetables and cook for another 5–7 minutes.

  8. Remove bay leaf, season with salt and pepper to taste, and serve hot.


Notes

  • For a spicier version, add red pepper flakes or hot sauce.

  • You can substitute ground turkey or chicken for a lighter option.

  • Add cooked pasta, barley, or rice for extra bulk.

  • Store in the fridge for up to 3 days or freeze for up to 3 months.

  • To thicken, mash a few potatoes or add a cornstarch slurry.
