Ingredients
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- ¼ teaspoon garlic powder (optional)
- ½ cup unsalted butter, cold and cubed
- 1 cup cottage cheese
- ¼ cup fresh herbs (parsley, chives, dill, or a mix), finely chopped
- ½ cup milk (plus extra for brushing)
Instructions
- Preheat & Prepare:
Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper or grease lightly. - Mix Dry Ingredients:
In a large bowl, whisk together flour, baking powder, baking soda, salt, and garlic powder (if using). - Cut in the Butter:
Use a pastry cutter or fork to cut the cold butter into the dry ingredients until the mixture resembles coarse crumbs. - Add Wet Ingredients:
Stir in the cottage cheese, chopped herbs, and milk. Mix until just combined—avoid overmixing. - Shape the Dough:
Transfer the dough to a lightly floured surface and knead gently. Pat or roll it to about ¾-inch thickness. Use a round cutter (or glass) to cut out biscuits. - Bake:
Arrange biscuits on the baking sheet with 1-inch spacing. Brush tops with milk for a golden finish. Bake 12-15 minutes until golden brown. - Serve & Enjoy:
Let cool slightly before serving. Enjoy warm with butter or your favorite spread!
