Description

These Herbed Cottage Cheese Biscuits are buttery, flaky, and infused with fresh herbs, making them a perfect side for any meal. Moist and tender thanks to cottage cheese, they pair beautifully with soups, stews, or a simple spread of butter and jam.

Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ¼ teaspoon garlic powder (optional)
  • ½ cup unsalted butter, cold and cubed
  • 1 cup cottage cheese
  • ¼ cup fresh herbs (parsley, chives, dill, or a mix), finely chopped
  • ½ cup milk (plus extra for brushing)

Instructions

  1. Preheat & Prepare:
Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper or grease lightly.
  2. Mix Dry Ingredients:
In a large bowl, whisk together flour, baking powder, baking soda, salt, and garlic powder (if using).
  3. Cut in the Butter:
Use a pastry cutter or fork to cut the cold butter into the dry ingredients until the mixture resembles coarse crumbs.
  4. Add Wet Ingredients:
Stir in the cottage cheese, chopped herbs, and milk. Mix until just combined—avoid overmixing.
  5. Shape the Dough:
Transfer the dough to a lightly floured surface and knead gently. Pat or roll it to about ¾-inch thickness. Use a round cutter (or glass) to cut out biscuits.
  6. Bake:
Arrange biscuits on the baking sheet with 1-inch spacing. Brush tops with milk for a golden finish. Bake 12-15 minutes until golden brown.
  7. Serve & Enjoy:
Let cool slightly before serving. Enjoy warm with butter or your favorite spread!
