Description

Hobo Casserole is a hearty, one-pan meal featuring savory ground beef, tender potatoes, and melted cheese, all baked together in a rich, comforting dish. This easy, family-friendly recipe is perfect for busy nights and can be customized with different proteins, vegetables, and cheeses.


Ingredients

For the Casserole:

  • 1 lb ground beef
  • 1 tbsp olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 45 medium potatoes, thinly sliced
  • 1½ cups shredded cheddar cheese
  • ½ cup grated Parmesan cheese
  • 1 tsp dried Italian seasoning
  • ½ tsp paprika
  • Salt and pepper, to taste
  • ½ cup beef broth or water
  • ¼ cup milk (optional, for added creaminess)
  • Fresh parsley for garnish (optional)

Instructions

  • Preheat Oven: Set oven to 375°F (190°C) and grease a 9×13-inch baking dish.
  • Cook Ground Beef: Heat olive oil in a skillet over medium heat. Add ground beef and cook until browned, about 5-7 minutes. Drain excess fat.
  • Add Aromatics: Stir in chopped onion and minced garlic. Cook for 3-4 minutes until onions soften.
  • Assemble Casserole: Spread beef mixture in the prepared baking dish. Layer thinly sliced potatoes over the beef, slightly overlapping. Season with salt, pepper, Italian seasoning, and paprika.
  • Add Cheese & Liquid: Sprinkle cheddar and Parmesan cheese over the potatoes. Pour beef broth (or water) around the edges. Drizzle with milk for extra creaminess, if desired.
  • Bake: Cover with foil and bake for 45 minutes. Remove foil and bake uncovered for 10-15 minutes until potatoes are tender and cheese is golden.
  • Serve: Garnish with fresh parsley and serve hot.
