Ingredients
- 12 oz bow-tie (farfalle) pasta
- 1 tablespoon olive oil
- 8 oz crimini mushrooms, sliced
- 15 oz mild Italian sausage, crumbled
- 4 cloves garlic, minced
- ½ teaspoon Italian seasoning
- Red pepper flakes, to taste
- 13 oz tomato pasta sauce or marinara
- 6 oz fresh spinach
- Salt and coarsely ground black pepper, to taste
Instructions
- Cook the Pasta:
- Bring a large pot of salted water to a boil.
- Cook pasta according to package instructions until al dente.
- Drain and set aside.
- Sauté the Mushrooms:
- Heat olive oil in a large skillet over medium heat.
- Add sliced mushrooms and sauté for 3-5 minutes until tender.
- Remove from skillet and set aside.
- Cook the Chicken :
- In the same skillet, cook crumbled Italian sausage over medium heat until browned (about 5 minutes).
- Drain excess fat.
- Add Aromatics & Seasoning:
- Stir in minced garlic, Italian seasoning, and red pepper flakes.
- Cook for 1 minute until fragrant.
- Combine Sauce & Spinach:
- Add tomato pasta sauce and fresh spinach.
- Stir and bring to a gentle boil, cooking for 5 minutes until spinach wilts.
- Mix Everything Together:
- Return mushrooms to the skillet.
- Add drained pasta and toss until evenly coated.
- Serve & Enjoy:
- Adjust seasoning with salt and black pepper.
- Serve hot, garnished with extra red pepper flakes if desired.
