Description

Keto Cauliflower Mac and Cheese is a creamy, cheesy, and low-carb alternative to traditional mac and cheese. Ingredients

  • 1 medium head cauliflower, cut into florets
  • 2 tbsp butter
  • ½ cup heavy cream
  • 4 oz cream cheese, softened
  • 1 cup shredded cheddar cheese
  • ½ cup shredded mozzarella cheese
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ¼ tsp mustard powder
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cook cauliflower: Steam or boil cauliflower florets until tender but not mushy. Drain well.
  3. Make cheese sauce: In a saucepan over medium heat, melt butter. Add heavy cream and cream cheese, stirring until smooth.
  4. Add cheese & seasoning: Stir in shredded cheddar and mozzarella until melted and creamy. Season with garlic powder, onion powder, mustard powder, salt, and pepper.
  5. Combine & bake: Toss cooked cauliflower in cheese sauce, transfer to a baking dish, and bake for 15-20 minutes until bubbly and golden on top.
  6. Serve hot & enjoy!

Notes

  • For a crispier topping, add crushed pork rinds or almond flour before baking.
  • Swap cheddar with Gruyère, Parmesan, or Monterey Jack for different flavors.
  • Add bacon bits, shredded chicken, or ground beef for extra protein.
