Ingredients

For the Zucchini Steaks:

  • 2 medium zucchinis
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

For the Topping:

  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 tablespoon fresh parsley, chopped (for garnish)

For the Garlic Butter Sauce:

  • 2 cloves garlic, minced
  • 1 tablespoon unsalted butter

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Slice the zucchinis into thick rounds or “steaks,” about 1-inch thick. Arrange them on the prepared baking sheet in a single layer.
  3. Drizzle the zucchini with olive oil and sprinkle with garlic powder, salt, and pepper. Toss gently to coat each slice evenly.
  4. Roast the zucchini in the preheated oven for 15-20 minutes, or until tender and slightly golden.
