Ingredients

For the chocolate base:

4 oz butter (1 stick)

8 oz cream cheese, softened

½ tsp vanilla extract

1 cup cocoa powder (preferably Dutch process)

1 cup Swerve Confectioners (or other keto-friendly powdered sweetener)

For the chocolate topping:

¼ cup coconut oil, melted

½ tsp vanilla extract

⅛ tsp salt

5 tbsp cocoa powder

5 tbsp Swerve Confectioners


Instructions

  • Prepare the Chocolate Base:

    • Melt butter in a small pan over low heat. Add the softened cream cheese and vanilla extract. Turn off the heat and mash the cream cheese into the butter until smooth.

    • In a large mixing bowl, combine cocoa powder and Swerve Confectioners. Mix well.

    • Pour the cream cheese and butter mixture into the cocoa powder mixture. Blend using a hand mixer on low speed until smooth and fluffy.

    • Spread the mixture evenly into a pan (8x6x2 inches works well). Freeze for 30 minutes before adding the topping.

  • Make the Chocolate Topping:

    • In a small bowl, combine melted coconut oil, vanilla extract, salt, cocoa powder, and Swerve Confectioners. Stir until smooth.

    • Use the topping immediately as it can firm up if left out for too long.

  • Assemble the Dessert:

    • Remove the base from the freezer. Smooth the top if necessary.

    • Pour the chocolate topping over the base and spread evenly. If some of the base melts slightly, it will create a beautiful swirl effect.

    • Cut the dessert into 30 small squares and enjoy!


Notes

  • Variations: Add peppermint extract, swirl in peanut butter, top with crushed nuts, or drizzle with sugar-free caramel for extra flavor.

  • If using a different sweetener, ensure it’s powdered for the best texture.
