Ingredients

  • 6 large eggs
  • 1 cup full-fat cottage cheese
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup chopped fresh spinach
  • 1/2 cup diced bell peppers (red or green)
  • 1/4 cup diced onions
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp paprika
  • Salt and pepper to taste
  • 1 tbsp olive oil or butter (for greasing the pan)

Instructions

  • Preheat Oven: Preheat to 375°F (190°C).
  • Prepare Vegetables: Chop fresh vegetables or drain thawed frozen spinach.
