Ingredients

1 lb ground beef (or Italian sausage)
1 small onion, diced
3 cloves garlic, minced
1 can (28 oz) crushed tomatoes
1 can (15 oz) tomato sauce
4 cups beef broth (or chicken broth)
1 tsp Italian seasoning
1/2 tsp red pepper flakes (optional)
1 tsp salt
1/2 tsp black pepper
1 cup ricotta cheese
1/2 cup heavy cream (optional, for extra creaminess)
8 lasagna noodles, broken into pieces
1 1/2 cups shredded mozzarella cheese
1/4 cup grated Parmesan cheese
Fresh basil or parsley for garnish


Instructions

1️⃣ Cook the Meat: In a large pot over medium heat, cook the ground beef (or sausage) until browned. Drain excess grease if needed.

2️⃣ Sauté the Aromatics: Add diced onion and cook until softened, about 3 minutes. Stir in minced garlic and cook for another 30 seconds.

3️⃣ Add Tomatoes & Seasonings: Pour in crushed tomatoes, tomato sauce, beef broth, Italian seasoning, red pepper flakes (if using), salt, and pepper. Stir to combine and bring to a gentle simmer.

4️⃣ Cook the Pasta: Add broken lasagna noodles to the pot and cook for 10-12 minutes, stirring occasionally to prevent sticking.

5️⃣ Make It Creamy: Stir in ricotta cheese and heavy cream (if using). Let the soup simmer for another 2-3 minutes.
