This Lemon Chicken Artichoke Soup is a light, refreshing, and comforting dish with tender chicken, tangy lemon, and hearty artichokes in a soothing broth. Inspired by Mediterranean flavors, this easy one-pot soup is naturally gluten-free, low-carb, and packed with protein. Perfect for meal prep or a cozy yet nutritious meal!

Ingredients

  • Chicken breasts or thighs, cooked and shredded
  • Chicken broth
  • Artichoke hearts, drained and chopped
  • Onion, diced
  • Garlic, minced
  • Carrots, sliced
  • Celery, chopped
  • Olive oil
  • Fresh lemon juice
  • Lemon zest
  • Fresh spinach or kale (optional)
  • Dried oregano
  • Dried thyme
  • Salt and black pepper
  • Red pepper flakes (optional)
  • Parmesan cheese, for garnish (optional)

Instructions

  • Sauté the Aromatics: Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery; cook until softened. Stir in garlic and cook for another minute.
  • Add the Broth and Spices: Pour in chicken broth and add oregano, thyme, salt, black pepper, and red pepper flakes. Bring to a simmer.
  • Add the Chicken and Artichokes: Stir in shredded chicken and artichoke hearts. Simmer for 10 minutes to blend flavors.
  • Finish with Lemon and Greens: Stir in lemon juice, lemon zest, and spinach or kale. Cook for 2-3 minutes until the greens are wilted.
  • Serve and Garnish: Ladle the soup into bowls and top with Parmesan cheese, if desired.

Notes

  • Creamy Version: Stir in heavy cream or coconut milk for a richer texture.
  • Low-Carb Option: Omit carrots or replace with zucchini.
  • Rice or Pasta Addition: Add cooked rice or orzo for a heartier meal.
  • Extra Herbs: Fresh dill or parsley enhances the flavor.
  • Spicy Kick: Increase red pepper flakes or add a dash of hot sauce.
