Ingredients
- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 2 tablespoons butter, divided
- 4 cloves garlic, minced
- 1 tablespoon lemon zest
- 2 tablespoons fresh lemon juice
- 1/2 cup chicken broth
- 1 pound fresh green beans, trimmed
- Salt and pepper, to taste
- Fresh parsley, chopped (optional, for garnish)
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Season both sides of the chicken breasts with salt and pepper. Add chicken to the hot skillet and cook for 5-7 minutes on each side, until golden brown and cooked through (internal temperature of 165°F/74°C). Remove chicken and set aside.
- In the same skillet, melt 1 tablespoon of butter. Add garlic and cook for 1 minute, or until fragrant.
- Add chicken broth, lemon zest, and lemon juice to the skillet, scraping up any brown bits from the bottom. Stir to combine and bring to a simmer.
- Add green beans to the skillet and cook for 5-7 minutes, or until tender and slightly crisp. Cover with a lid to speed up cooking if desired.
- Return the chicken to the skillet and add the remaining tablespoon of butter. Spoon the sauce over the chicken and green beans.
- Garnish with fresh parsley and serve immediately.
Notes
- Add Parmesan cheese over the dish just before serving for a cheesy flavor boost.
- For extra heat, incorporate red pepper flakes into the garlic butter sauce.
- Swap chicken for tofu or tempeh for a vegetarian version.
- Feel free to substitute green beans with other veggies like asparagus, broccoli, or zucchini for variety.
