Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 2 tablespoons butter, divided
  • 4 cloves garlic, minced
  • 1 tablespoon lemon zest
  • 2 tablespoons fresh lemon juice
  • 1/2 cup chicken broth
  • 1 pound fresh green beans, trimmed
  • Salt and pepper, to taste
  • Fresh parsley, chopped (optional, for garnish)

Instructions

  • Heat olive oil in a large skillet over medium-high heat.
  • Season both sides of the chicken breasts with salt and pepper. Add chicken to the hot skillet and cook for 5-7 minutes on each side, until golden brown and cooked through (internal temperature of 165°F/74°C). Remove chicken and set aside.
  • In the same skillet, melt 1 tablespoon of butter. Add garlic and cook for 1 minute, or until fragrant.
  • Add chicken broth, lemon zest, and lemon juice to the skillet, scraping up any brown bits from the bottom. Stir to combine and bring to a simmer.
  • Add green beans to the skillet and cook for 5-7 minutes, or until tender and slightly crisp. Cover with a lid to speed up cooking if desired.
  • Return the chicken to the skillet and add the remaining tablespoon of butter. Spoon the sauce over the chicken and green beans.
  • Garnish with fresh parsley and serve immediately.
