Description

These Maple & Lentil Vegan Sausage Patties are a protein-packed, plant-based alternative to traditional breakfast sausage. Made with hearty lentils, sweet apple, and warming spices, these patties are crispy on the outside, tender on the inside, and naturally sweetened with maple syrup. Perfect for meal prep, they’re a delicious way to start your day!

Ingredients

  • 1 cup cooked lentils, drained
  • ½ cup grated apple (Fuji or Honeycrisp)
  • ½ cup rolled oats
  • ¼ cup chickpea flour
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 1 tbsp maple syrup
  • 1 tsp dried sage
  • ½ tsp dried thyme
  • ½ tsp smoked paprika
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 tbsp olive oil (for cooking)

Instructions

  1. Blend the base – In a food processor, pulse the cooked lentils, grated apple, and rolled oats until slightly chunky for texture.
  2. Mix the ingredients – Transfer to a bowl and stir in the chickpea flour, diced onion, garlic, maple syrup, and seasonings. Mix well until combined.
  3. Shape the patties – Form the mixture into small, round patties.
  4. Cook the patties – Heat olive oil in a skillet over medium heat. Fry each patty for 4-5 minutes per side until golden brown and crispy.
  5. Serve and enjoy – Pair with avocado toast, scrambled tofu, or a full breakfast platter.

Notes

  • For a spicier kick, add cayenne pepper or red pepper flakes.
  • To keep them gluten-free, use certified gluten-free oats.
  • For a firmer texture, let the mixture sit for 10 minutes before shaping.
  • Storage: Refrigerate in an airtight container for up to 4 days.
