- 1/2 cup sun-dried tomatoes, chopped
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1/2 cup grated Parmesan cheese
- Salt and pepper, to taste

Instructions
- Cook the pasta: Cook pasta according to package instructions. Drain and set aside, reserving 1/2 cup pasta water for later.
- Cook the shrimp: Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Season shrimp with salt and pepper. Cook shrimp for 2-3 minutes per side until pink and opaque. Remove shrimp from skillet and set aside.
- Prepare the sauce: In the same skillet, add the remaining tablespoon of olive oil. Sauté garlic over medium heat for about 1 minute. Add red pepper flakes and sun-dried tomatoes. Cook for another 2 minutes.
- Make the creamy sauce: Pour in chicken broth, bringing it to a simmer. Scrape up any bits from the skillet. Add heavy cream and Parmesan cheese. Stir until the sauce thickens, about 3-5 minutes. Adjust seasoning with salt and pepper.
- Combine pasta and shrimp: Add cooked pasta to the skillet, tossing to coat in the creamy sauce. If the sauce is too thick, add reserved pasta water to loosen. Return shrimp to the skillet, tossing to combine everything.
- Serve: Garnish with fresh parsley and serve immediately.
