Description

These Mediterranean Spinach and Feta Crisps are a delicious and light snack that combines the crispy texture of baked phyllo dough with the rich, creamy flavors of feta cheese and spinach. Perfect as an appetizer or a quick snack, these Mediterranean crisps are fresh, savory, and packed with flavor, making them a crowd-pleasing treat for any occasion.


Ingredients

  • 1 package phyllo dough (about 20 sheets)
  • 2 cups fresh spinach, chopped
  • 1 cup crumbled feta cheese
  • 1/2 cup ricotta cheese
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tbsp fresh lemon juice
  • 1 tsp dried oregano
  • Salt and pepper, to taste
  • 1 egg (for egg wash)
  • 1 tbsp sesame seeds (optional, for garnish)

Instructions

  • Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  • In a large bowl, combine the chopped spinach, crumbled feta cheese, ricotta cheese, minced garlic, olive oil, lemon juice, oregano, salt, and pepper. Mix until fully combined.
  • Lay one sheet of phyllo dough on a clean surface and brush lightly with olive oil. Place another sheet on top and brush again with olive oil. Repeat with 6-8 sheets.
  • Once stacked, cut the phyllo sheets into 2-3 inch wide strips.
  • Place a spoonful of the spinach and feta mixture at one end of each strip.
  • Roll the phyllo dough over the filling, forming a tight, cigar-shaped crisp. Place each rolled crisp on the prepared baking sheet.
  • Beat the egg and brush over each crisp for a golden finish. Sprinkle with sesame seeds if desired.
  • Bake for 20-25 minutes or until golden brown and crispy.
  • Remove from the oven and let cool slightly before serving.

Notes

  • Add sun-dried tomatoes for an extra layer of flavor.
  • Substitute goat cheese or mozzarella for feta for a different taste.
  • For a gluten-free version, use gluten-free phyllo dough.
