Ingredients
- 1 package phyllo dough (about 20 sheets)
- 2 cups fresh spinach, chopped
- 1 cup crumbled feta cheese
- 1/2 cup ricotta cheese
- 2 cloves garlic, minced
- 2 tbsp olive oil
- 1 tbsp fresh lemon juice
- 1 tsp dried oregano
- Salt and pepper, to taste
- 1 egg (for egg wash)
- 1 tbsp sesame seeds (optional, for garnish)
Instructions
- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
- In a large bowl, combine the chopped spinach, crumbled feta cheese, ricotta cheese, minced garlic, olive oil, lemon juice, oregano, salt, and pepper. Mix until fully combined.
- Lay one sheet of phyllo dough on a clean surface and brush lightly with olive oil. Place another sheet on top and brush again with olive oil. Repeat with 6-8 sheets.
- Once stacked, cut the phyllo sheets into 2-3 inch wide strips.
- Place a spoonful of the spinach and feta mixture at one end of each strip.
- Roll the phyllo dough over the filling, forming a tight, cigar-shaped crisp. Place each rolled crisp on the prepared baking sheet.
- Beat the egg and brush over each crisp for a golden finish. Sprinkle with sesame seeds if desired.
- Bake for 20-25 minutes or until golden brown and crispy.
- Remove from the oven and let cool slightly before serving.
