Description

This classic New York Cheesecake is rich, creamy, and perfectly indulgent. Featuring a smooth cream cheese filling on a buttery graham cracker crust, it’s baked to perfection for the ultimate dessert experience. Ideal for holidays, dinner parties, or a special treat, this cheesecake will never disappoint.

Ingredients

1 1/2 cups graham cracker crumbs

1/4 cup sugar

1/3 cup melted butter

4 (8 oz) packages cream cheese, softened

1 1/4 cups granulated sugar

1/2 cup sour cream

2 teaspoons vanilla extract

5 large eggs

Instructions

  • Preheat your oven to 325°F (163°C).

  • In a bowl, combine graham cracker crumbs, 1/4 cup sugar, and melted butter. Press the mixture into the bottom of a 9-inch springform pan and set aside.

  • In a large bowl, beat the cream cheese until smooth. Gradually add 1 1/4 cups sugar and beat until creamy. Mix in sour cream and vanilla extract.

  • Add eggs one at a time, mixing just until incorporated after each addition.

  • Pour the cream cheese mixture over the prepared crust.

  • Bake for 55-70 minutes or until the center is set (it should have a slight jiggle).

  • Turn off the oven, leave the cheesecake in for an additional hour with the door ajar.

  • Remove and allow to cool to room temperature before refrigerating overnight.

  • Serve chilled.

Notes

  • Make ahead: Best if made a day ahead to allow chilling overnight.

  • Freezing: Can be frozen for up to 2 months—thaw in the refrigerator overnight before serving.

  • Optional variations: Add fruit swirls, melted chocolate, or go gluten-free with alternative crusts.

  • Toppings: Decorate with fresh fruit, whipped cream, or powdered sugar.
