Ingredients
1 1/2 cups graham cracker crumbs
1/4 cup sugar
1/3 cup melted butter
4 (8 oz) packages cream cheese, softened
1 1/4 cups granulated sugar
1/2 cup sour cream
2 teaspoons vanilla extract
5 large eggs
Instructions

Preheat your oven to 325°F (163°C).

In a bowl, combine graham cracker crumbs, 1/4 cup sugar, and melted butter. Press the mixture into the bottom of a 9-inch springform pan and set aside.

In a large bowl, beat the cream cheese until smooth. Gradually add 1 1/4 cups sugar and beat until creamy. Mix in sour cream and vanilla extract.

Add eggs one at a time, mixing just until incorporated after each addition.

Pour the cream cheese mixture over the prepared crust.

Bake for 55-70 minutes or until the center is set (it should have a slight jiggle).
