Ingredients

  • 2 lbs beef stew meat
  • 2 tbsp cornstarch (divided)
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 2 tbsp Worcestershire sauce
  • 1 lb red potatoes, cubed
  • 1 cup pearl onions
  • 2 large carrots, sliced
  • 2 stalks celery, chopped
  • 2 tbsp tomato paste
  • 1 tsp salt
  • 1 tsp granulated sugar
  • 1 tsp dried parsley
  • 1 tsp paprika
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • ½ tsp black pepper
  • ¼ tsp ground allspice
  • 1 bay leaf

Instructions

  • Coat the beef stew meat with half of the cornstarch.
  • Heat olive oil in a large pot over medium-high heat. Add beef and sear for 2 minutes per side.
  • Add minced garlic and sauté for an additional minute.
  • Deglaze the pot with beef broth and Worcestershire sauce.
  • Add red potatoes, pearl onions, carrots, celery, and tomato paste.
  • Season with salt, sugar, parsley, paprika, oregano, basil, black pepper, and allspice. Add the bay leaf.
  • Bring to a boil, reduce heat to low, cover, and simmer for 90 minutes.
  • Mix remaining cornstarch with water to form a slurry. Stir into the stew and cook until thickened.
  • Remove the bay leaf before serving.
